Food; something to savour upon, something to tingle your taste buds or something just to fill up that empty tummy. In my opinion, it is something we should be thankful for; food is what that keeps us going; food is meant to be enjoyed. Food is recognized in may different cultures and traditions. Well, unlike all those food aficionados out there, I'm here to give you a simple and sweet take on my favourite food. I go for those exotic types of food.
My favourite food is none other than Escargot, sound weird? Let me explain, Escargot is a French cuisine, it is snails cooked with garlic and butter, served up nice and hot for you to indulge in. It is usually served as an appetizer. Escargot may seem disgusting to you, however a whiff of it might send you begging for it. I suppose that was how I started to like Escargot. Catching the snails and placing them on your plate may seem like how the dish is prepared and then served. However, you are wrong. The captured snails have to undergo various procedures before they can be edible. So here is how it goes, the snails are taken out of their shells to be cooked first, reason being is that the impurities in the snail has to be purged before it can be edible. You won't want an upset tummy right? After cleaning the impurities, the snails can then be cooked with tasty spices and then placed back into their shells to be served. Escargot isn't just all about the food itself.
What is so unique and special about the dish is that there are special utensils for you to use when you eat it. There is snail tongs and the snail fork. If it is your first time hearing about this then listen up. The snail tongs are designed in such a way that the part where the tongs grab the snail is circular like the snail shell. Here is where the snail fork comes into action, as the snail is being held, the snail fork is suppose to grab on to the snail meat and extract it out of the shell. There you go, so now you can enjoy it. Five or six snails are usually served per dish.

Dear Mrs Yeo,
School has been a blast ever since the term started on the second of January: a new year, new friends, new status and a whole lot more. I just do not know where to start. In the next few paragraphs, I will explain the various changes that have happened in the new term.
First up, there has been a slight change to our uniforms. Instead of the usual collar pin, we now have the iron-on badge that has to be ironed on to the right breast pocket. I must say that the iron-on badge really saves time and effort compared to the old school collar pins. Collar pins had to be put on daily; it was small and might be easily misplaced. However, I still prefer the collar pins, as they have been in use ever since the school started seven years ago. It was most probably can be considered as a fashion icon in Kent Ridge. What do you think, Mrs. Yeo?
Secondly, the school has just received a facelift in terms of the exterior. The school has just been painted with a variety of bright and vibrant colours, replacing the old, faded and dull ones. The new colour definitely caught my attention upon seeing the school on the first day. The colour is not just that to give the public a good image of the school, but in other ways it can benefit the students too. The new bright and vibrant colours of the school can make the environment for studying a more conducive and better one. This can help the students study better. Don’t you agree, Mrs. Yeo?
Thirdly, the new status I have. I am now in secondary four and hence I am also known as a senior. Being in secondary four, we sort of have some ‘privileges’. Our classroom gets to be the ‘nearest ones to heaven’. We get to sit in the gallery during assembly and I must say that the view from there is way better than sitting in the hall. The seats in the gallery are a little more too casual. However, the best ‘privilege’ is that Mr. Koh Suan Lam gives us a bit more of respect, something in which has to be earned right from the very start. He does not shout at us as often compared to my three previous years. He also allows us to get dismissed first after assembly. Isn’t that just awesome? Secondary four life is definitely going to be the best.
Lastly, I just made some new friends through the twinning programme our school had with a school in Shanghai. I was two years their senior. They told me that the way we study in Singapore is totally different from how they study in Shanghai. From what I heard, their education is very strict. That just goes to show how being a Singaporean can be so fortunate and relaxed. They were with us for two weeks. We played soccer together and they even attended lessons with us. I had an enjoyable time and I think they had too.

Confusion was what that engulfed me on my very first day of secondary education. I was fetched to school by my father and I got off unwillingly. I felt afraid and shy. I assembled in the school hall with other new secondary ones. Every secondary was as quiet as a mouse, whereas the other levels were all chatting away loudly and catching up with one another. I had friends from my primary school with me in this school; however they were in a different class. How unlucky. All chatter suddenly stopped as a male figure appeared from behind the stage. He was tall, wearing sports wear and had a muscular build. I was thinking to myself, who is this man? Why does everyone turn silent upon seeing him? Questions filled my mind as I waited in awe. Then, he spoke, “Welcome back to Kent Ridge Secondary School!” his voice was firm and thunderous. Inferring from the way he dressed and his power to make a thousand students silent, I presumed he was the discipline master. His name was Mr. Koh Suan Lam, after a few words from the then school Principal Miss Chamb Cherk Ing. After an hour long orientation talk in the hall it was finally time to get back to class. Upon entering the classroom, everyone went silent and we carried on doing administrative matters with my form teacher, Madam Jean Tan. Recess came, and I was so excited. Perhaps, this was the time of the first day of school in which I will always remember. I wanted to see what food the canteen was selling, whether it would be better than my primary school. I queued up at the noodle store to buy a bowl of noodles like I always did at my primary school. However, something embarrassing occurred, after ordering a bowl of noodles and when it was time to pay for it, I was so used to paying seventy cents in my primary school that i gave the stallholder seventy cents. I immediately took out my wallet and paid the remainder, everyone in the queue was looking at me; so much for buying just a pathetic bowl of noodles.
It finally came to the end of the day; the day was definitely an interesting one for me. but there was something I could brag about, I had made three friends!Labels: it ends tonight...
